Italian Citrus Marinade

***good for pork, chicken, beef, fish or even as a salad dressing!




Citrus. I just can never get enough of it! I guess it's in my genes. I really think it's an Italian thing!

I put it on meats, fishes, pastas and lots of desserts!

It's refreshing, cheerful and somehow always satisfying!

So when I want to really brighten up a mood... or a dish... it's to the fruit bowl I go!


Here's the recipe

(but of course... if you don't have oranges use lemons---use any mix of citrus or just one... it's still always good!)


Dorina's Italian Citrus Marinade

Juice of 3 oranges

Juice of 3 limes

about a cup of wine

about 1/4 -1/2 cup extra virgin olive oil

finely chopped garlic (qb- which means "quanto bisogno"- or "as much as needed")

chopped fresh parsley

pinch of oregano

pinch salt

pinch pepper ( i like to use white pepper...)


Some options/alternatives i have used---

  • fresh basil, finely chopped fresh rosemary, fresh sage

  • oranges, lemons, limes even grapefruit!

  • finely chopped Italian hot peppers or red pepper flakes (for a little kick!)

Mix all ingredients together in a bowl... then pour over your meat of choice. You can marinate for an hour or overnight. The longer the better.

Go ahead and cook the meat in the marinade...then use it to pour over the meat when you serve.

It's so good to soak up the leftover juice with a little crusty bread!


**Below is a pork loin and some pork chops marinated and then cooked in this citrus marinade.

Let me tell you... WOW! So good! ...and it's pretty too!
